Make a simple blueberry syrup by combining blueberries, water, and sugar in a small saucepan and cooking until the blueberries start to burst and the sugar has dissolved.
Strain the syrup and chill.
In a large pitcher, combine lime juice, wine, vodka, and blueberry simple syrup and stir to combine.
Take fresh mint and smack it between your hands to release the flavor and add to the sangria.
Add extra blueberries and lime wedges to the pitcher and let sit in the fridge for at least 2 hours but up to overnight.
When ready to serve, add extra blueberries, mint, and lime wedges to glasses and pour the sangria over crushed ice.
Top off with sparkling water and serve immediately.
