Waldorf Salad
  1. Toast the pecans or walnuts.

  2. Chop the apple, celery, spring onions and optional grapes.

  3. Make the dressing by grinding the cashew nuts in a food processor or high powered blender.

  4. Add the water, mustard, vinegar, lemon juice, garlic and seasoning and blend together to make a thick dressing.

  5. Toss the greens with half the dressing.

  6. Add the nuts, apple, celery, spring onions and grapes.

  7. Drizzle with the remaining dressing and serve immediately.
