Heat large cast iron pan to moderate heat, turn heat off (about 90c). Spread thin layer of oil with paper towel.

Wait for the batter to firm up, then crack egg on top and spread into thin layer
When air bubble start to form, scrape underneath pancake to loosen from pan.
Garnish with coriander and spring onions, then flip

Crack tortilla chips and fold over. Slice in half. Done!
