Used baby Bella, shiitake (prev dried). Veg boullion, but added too much salt. Could use a lot more cheese flavor. 6mins cook time, and quick vent, was perfect. Recipe adjusted, saved
For 4 adult servings 2x these to get: 2 large eggplants; 4T oil; garlic and ginger (small chopped for bursts of flavor); 1 med/lrg onion; 1.5x these: dry spices; 5 plum/roma tomatoes + 1/4 tsp black pepper. When adding eggplant, add 1/2 - 3/4C of its water. - can use even more eggplant, be sure to add water accordingly - takes about 35 minutes for Instapot to complete cooking. During this time, sauté in cast-iron instead ( faster and easier), decrease cooking time by about 25%. - great with naan. Serve with simple side (crunchy, air fried)
