Did this with ground beef instead of ground chicken, to which I added about 200g finely chopped mushrooms and a little bit of chopped yellow onion. I opted to serve it over rice instead of tacos. It’s so yummy! Because of my peanut allergy, I also subbed sunflower butter for peanut butter in the sauce. Will be making this again!! Makes 4 servings.
I used this recipe for about 6-7 servings, except I added a can of corn, two zucchini (diced), and 3 carrots (diced) for extra veggies. Plus I added some extra seasonings: higher quantities of the ones mentioned, plus paprika and a little bit of smoked paprika. This bowl has some cornbread crumbled over the top! Yum!
