I love these cookies! They taste so good and you can play around with the flavors if you like! Every time I make these people hunt me down for the recipe! They are gluten free and so soft and yummy. I like to make them into a thumbprint with a cherry or I sometimes add orange zest instead of chopped almonds. One Note: if you add the cherry add before you put in the oven, you can also add Nutella but if you do add it after it comes out the oven. Also if you use a stand mixer to make them which, is my favorite way to make them, add the almond paste and sugar first and mix until crumbly then add the rest of the ingredients.
These cookies are such a yummy gluten free treat! I loved these but, the first batch I added too much egg white because the batter was taking a long time to mix, DO NOT DO THAT. The cookies were yummy but came out way too thin. The 2nd batch was perfect! Just be ready to get a bit of an arm workout in! 😊
I like to fold in flour coated strawberries to the batter and I freeze my bananas in the skin, let defrost for 10 mins and then cut the top and squeeze the whole banana into the bowl. I make this recipe all the time and it’s always a hit!
