swapped in yellow mustard for dijon, dried parsley for fresh, added some diced mini sweet peppers. Cakes are a little loose but still very good. I could have waited longer for cooler mushrooms to squeeze out more liquid.
tried this with and without lattice crust, one time with half the corn starch, and also added cinnamon and plums instead of most of the peaches - in both cases, the pie was delicious but gooshed sticky burnt up liquid all over the stove
