Fantastic taste. Don't oil the peppers too heavily before going into the oven, and give them plenty of time to darken. Would suggest broiling or at least placing them closer to the burner next time so they get some char. My current food processor is too small for the full quantity of sauce, so do it in batches. Keeps well.
Very good when paired with the green enchilada sauce recipe also saved. Make sure to purchase a hefty quantity of cheese. Used my hatch green chile seasoning on the chicken when cooking it - was great. Make sure you have large glass baking dish available. Also added some diced onions to the enchiladas which I think added.
