Delicious! The bell peppers are sweet and tangy and a great texture, in my opinion. The barrata cheese almost turns into a creamy sauce when you mix your bowl before eating. I added Italian sausage which cooked perfectly without even needing to adjust the cook time. The non-refrigerated gnocchi (on the shelf in an airtight bag) was way cheaper than the refrigerated kind, so I tested how to cook the non-refrigerated kind with two sheet pans: in one I just roasted per the instructions, and in the other, I boiled the gnocchi with salt first and then added it to the sheet pan. Both my partner and I agreed the boiled first one was better. It turned out softer/less chewy and tasted less starchy. The basil and balsamic glaze were both the perfect final touches. Will definitely want to make this again with how easy, low on dishes needed, and yummy it was!

It’s been a while since I made this but when I did, I made a huge pot so I’d have meals for a while. I used canned corn instead of the cobs (1 can = about 2 cobs) and not gonna lie it still took forever to make, so much stirring and pouring…. Probably gonna be even more of a while before I attempt this one again

I’ve made these twice now and they’ve turned out great both times! Really enjoy them for meal prepping because I can just pop one or two potato halves in a separate container the night before and then I have packed lunch/dinner! Less messy than separate toppings and it tastes even better imo, depending on your mood

Made this with instructions for about 10 servings, it fed me and my friends several meals over the course of five days! Way more than just 10, and it was delicious
