Pretty good, quite tangy and a bit strong on the mayo flavor. I made two: one with just a bit of the mayo subbed out for greek yogurt (ran out of mayo), and the other subbing mozzarella for cheddar, ricotta for mayo, and pecorino romano for the top layer feta. I liked that one better. :)
Such a nice way to use up green tomatoes. I have several ripe green I used. It’s possible the jaggery was too much with that factor as it was a bit sweet. Also I doubled the recipe and added 1/2gal milk’s worth of homemade paneer. Also halved the Kashmiri chili powder
