Stovetop rice, add 2.5c broth. Cover and simmer for about 15-18 minutes, or until the rice is tender and the liquid has been absorbed. Remove from heat and let it sit, covered, for 5 minutes.
Skip garlic ginger sauce, make shallot ginger sauce
SauceGinger shallot sauce — Place all the sauce ingredients in a bowl and mix to combine. Set aside for at least 5 minutes.

To absorb flavor: boil in salty water for 5-10 min. In a small saucepan bring 2c water and 1tbsp salt to a boil. Pour it over the tofu and leave it for 5 minutes. Drain the tofu and thoroughly blot it dry with paper towels or a clean kitchen towel.
