This is finally a high altitude recipe I like, after trying and failing to tweak several batches of my old, low-altitude recipe. Mix all the wet ingredients separately before adding them to the dry ingredients. Beat the eggs first, then gradually drizzle in the melted butter while whisking. I added a lot more milk to make them thinner, and left out the cinnamon/nutmeg. I always make one large pancake in the pan, instead of multiple smaller ones, and they cook evenly, as long as the batter is thinner. Cook over fairly low heat. The recipe doubles (and triples) well.
