Got the parsley this time, still didn't use a fresh lemon because it feels wasteful. I doubled the spices (except not quite double on the cayenne), which was definitely the right move. Still room for improvement.
Half a batch, used Knorr chicken bouillon this time. I think it definitely tastes better with vegetable bouillon. I diced the potatoes smaller this time, I think it might have been better off with the larger dice.
Take 2. Used a different vegetable broth (Frontier Co-op, low sodium). It was a little too low sodium for my taste, but even with the salt I added it was still lower sodium than before, so that's not too bad. I still ate too much. I extended the cook time to 40 minutes again.
Very tasty! I was really tempted to add thyme but I'm glad I tried it without. I suspect a good part of what made it successful was the Knorr vegetable bouillon. I used Yukon gold potatoes and yellow onions. Would certainly be even more delicious with bacon. I don't even think it needs cream.
