Used chicken breast instead of salmon again. Obviously much better with sun-dried tomatoes! Doubled the Cajun seasoning (and the pasta) again. My timing is still terrible but I held the chicken longer this time so it wasn't so overcooked.
Modified it on the fly for one can of tuna, left out the yogurt on accident (mostly). A bit tangy, but the yogurt probably would have balanced that out somewhat. Served on a whole wheat pita.
My sun-dried tomatoes were unusable so I substituted frozen bell pepper strips. Doubled the Cajun seasoning and was pretty generous with the garlic - no regrets. Doubled the pasta, couldn't help myself.
Unfortunately my sense of timing isn't great so the chicken is overcooked, but overall it still tasted pretty good.
Used baby spinach, added extra dill. Could probably cut down the amount of pasta, maybe somewhere between a quarter and a third. Maybe more black pepper.
Made again for Passover seder, April 12. Left out the honey and dressed a salad with cucumbers, tomatoes, parsley, and mint to give it a tabbouleh flavor. Maybe chopped the greens top much, added a little too much dressing.
