Used 8oz lump crab, 8oz crab leg. Added a FAIR bit of Old Bay at the end. Very rich and delicious!

I changed so much about this recipe. Okay, first I fried the Pasilla chiles in a dry heat to blister and rough tore them (no chopping, you’ll see why later). Then I seared the chicken thighs in oil for maybe 3min per side, don’t need to cook them through yet. Followed everything else as written, but added some oregano to the soup AS WELL AS the seared chicken thighs and everything else to let simmer for 15min. Took out the thighs to cool and shred (much nicer texture than cutting into chunks!), and took an immersion blender to the soup until I couldn’t see any big chunks. This is a key thing missing from this recipe! The texture would be so strange without blending. Anywho, after that, added the shredded thighs, black beans, AND a cup of corn to the soup. Taste and adjust. To serve, of course ladle over tortilla chips. I couldn’t be bothered to make my own strips. Annnnnd I shredded up some cabbage and radishes like pozole to garnish, along with the Oaxaca cheese and lime. Chefs kiss.

A few changes to accommodate what I had on hand/what I like: rice instead of orzo, ghee instead of butter, added 2 cloves minced garlic, palmful red pepper flakes, and 2 parsley stems to the soffritto, parsley leaves and fennel fronds at the end, no lemon zest. Boneless skinless thighs left a ton of brown bits which needed deglazing before adding veg. Nestled the chicken in with the final ingredients and left on low for a few minutes to bring chicken to heat. Turned out really brown and nonphotogenic but tasted quite good!

Tried this with a pound of pork (half pound is hard to find) and chopped baby spinach instead of escarole and it also worked. Used a cheap Pinot Grigio and regretted that a bit as it was off-dry but it just needed more salt and red pepper flakes to balance. I’m gonna keep returning to this for my Italian wedding soup standard cuz I just love leeks and fennel! Paired with a lovely greco di tufo which I felt too expensive to cook with.

Used ghee instead of olive oil, needed more to ensure gnocchi didn’t stick. Very nice.
