Used 1/3 cup of sugar instead, plus a little honey. Didn’t do the test to see if the dough was ready or not. I let it sit in the oven for 2 hours during the first rise. Then went to lunch and came back and started it (maybe hour and a half).
Used bacon geese and 1/4 tbsp of butter with the flour for the roux. Took a while for it to thicken. Added bacon for the last 5 minutes. Maybe do 10 minutes next time.
Dani the Chef said 2 eggs per person and lots of lemon. I used 4 eggs for 4/5 servings and it definitely wasn’t enough. I’d say 1 bacon for 4/5 people plus we added peas equal to the bacon
