I made this a while ago for church where it competed with a chocolate and a vanilla cake. The kids went for those rather than my mushy berry option. Other than that, this cake turned out fresh, tangy and moist! Maybe a little less raspberries next time. I froze the leftover slices and intend to reheat them in the toaster (in a silicone toaster pouch) whenever I feel like having one.
I added leftover potatoes and thus increased the number of servings to 5 servings. Dense, filling and packed with protein! The portion needs to look like it’s on the small side, then it is just right.
