I delicious and balance meal. I used the recommended proportion of ingredients besides garlic (I used an entire bulb). I obviously didn't have fresh ginger so I used dried powder ginger from an old spice rack and it worked just fine. If you have fresh ginger then the congrats, but dried ginger worked just fine. Lastly, I added baby Bella mushrooms to even everything out, but that is not in the original recipe.
Made a huge pot of soup for basically $12 (if you have all the spices already). I doubled (more like tripled the amount of garlic lol) and threw in a jalapeno as well. Also I used smoke paprika as I prefer the taste over regular paprika. I am eating it as I type this and it delicious, the extra garlic really came through. Great for meal prep!
