So tasty! Halved the recipe but used two cans beans. I added 1/4 cup sour cream for extra flavor.

Definitely will make this again. I used half my normal cornbread recipe instead of a box mix. Didn’t have corn, but I did have a can of refried beans so I heated those up and spread them over the cornbread and then topped with the meat mixture, used 1/2lb ground beef and cooked the peppers and onion with that. 8oz tomato sauce, half the spices. Used chipotle peppers instead of green chiles.

Delicious! This recipe is definitely for a deep dish skillet. Used regular rice and precooked it, could only fit 1 cup of cooked rice. Steamed some frozen broccoli for 3 minutes before adding. Also only used 2.5 cup of milk and halved the flour. Used 2 cups chicken and it was to the tip top of the skillet! I will probably add some sautéed chopped onion and garlic next time.

Doubled the recipe, it made 48 mini muffins and 8 regular muffins. I used a silicone mini muffin pan and had to bake for 15 minutes(butter the pan first). Did 20 minutes on a regular metal pan. I omitted the cinnamon and added mini chocolate chips.
They turned out good, but I don’t think the baking powder is necessary. I’ve got other banana bread recipes and none use it. Also this uses 3x the amount of vanilla most of these recipes call for so I’m going to experiment a little next time. (No baking powder, 1/3 of the vanilla, add an extra egg)

I’ve cooked this recipe dozens of times over the past year and it’s always turned out great.
