I added 1/2 tsp dried rosemary and 1/2 tsp coarse sea salt to the herb rub, as well as increasing the amount of garlic by 50% and crushing it rather than mincing it.
That rub was applied to the roast a couple of hours prior to the time it was due to cook so it could soak in and flavor the meat. I put the roast in a shallow roasting pan and covered it with plastic wrap. That came back out of the fridge about half an hour before I turned on the oven so the roast wasn't ice cold going in.
What a perfect prep for a very reasonably priced cut of meat. It carved like a dream.
Almost effortless, and so many options for toppings. The sliced garlic does a bit better if it sits in a little olive oil prior to being scattered over the dough. More caramelizing; less scorching. Pictured is a double recipe made in two quarter sheet pans.
Use at least 1.5 lbs of broccoli, and go with the food processor option unless you absolutely LOVE cleaning the counter plus endless amounts of chopping. My family absolutely loved this.
I made half of the recipe using heirloom navel oranges (OMG!!!) and added a very finely minced piece of peeled ginger that was about 25mm x 20mm. Half of the recipe made 5 C of marmalade total (some not shown in the pic).
