Loved these and would make again! Putszy so I would only make when I really am in the mood. It made 6 empanadas with my two rolls of premade pie crusts. And half of the meat mixture leftover to enjoy over rice for leftovers.
Loved it, but added a splash of red wine vinegar for some extra brightness. Also had some celery so I chopped that up and added it too. Reserved about 1/2 c of the ramen noodles to serve on top for an extra crunch.
Delicious, omitted the extra teaspoon of salt and subbed minced garlic and dried parsley. Added chicken meatballs. Next time I would only add 1 Tbsp of salt to the pasta water, and do 6 garlic cloves instead of 8.
