This spring (2026), instead of the bananas I stewed 2c rhubarb with 1/2 quart strawberries 1/2 cup sugar and a cup and a half of water. For 20min. I strained them (retain the syrup!!) and used in place of the bananas.
As a bonus I got about a litre of strawberry rhubarb simple syrup. Cocktails anyone?
I used my fave crumble recipie instead of this one. And added 2c of mixed frozen berries to cut the rhubarb tartness. Fantastic! Served at H&D’s 2024.15.18
