I didn't quite get it to turn out the way I wanted. For some reason the sauce wouldn't reduce and stick to the sauce, it may have been because of the fat content of the meat. May need to drain first before adding sauces going forward. Did improvise using about a tablespoon of flour to get it to stick. Also improvised using cooking sherry instead of xhaoshing wine as that's what I had on hand. Still appeared to work out fine. Broke the yolk on the egg, but that's unrelated to the rest of the cook.
Yummy! Added white beans for protein and they had a nice texture too. We foraged a ton of morels and had them on the side and mixed a couple in which was great but I wanted them to be the star of their own show lol so I mostly ate them by themselves, sautéed in butter and a dash of soy sauce.
I did something wrong as despite the instructions being followed, it felt (and does appear like) i went a bit overkill on the beef vs rice patty size. Felt like I could have used more than just 2 tbsp of yakiniku sauce. Maybe a bit more on top after?
