Spreads nicely. If making with 3.5oz, give way more room than you think. Can typically fit about 6 on a large pan, and 4 in a medium, 3 in a small. (Tried 8 on a large pan. 1st pic, top batch). Only bake 2 pans at a time on the same rack*. Parchment paper on them since silicone prevents too much browning on bottom of the cookies. Tried shiny and dark pans. Not too much difference.
Freezes very well. Make sure to thaw before. I thawed in the morning and bake in the early evening. ~9hrs. Baking from frozen is fine, but won't spread as much and is a bit taller/chewier (2nd pic). You won't get those nice thin layers/puddles of chocolate.
Notes
* : With stacking pans in the oven - the bottoms of the bottom rack will get too hot and the bottoms of the top rack won't get hot enough.
Made a double batch. Skipped the nuts and hemp seeds. Really tasty but had to cook for a lot longer. Even after fully cooked it felt tender. Husband and baby liked it
