I cut the sugar slightly and it is definitely not very sweet. Great tang from the discard and the avocado oil created almost a butter flavor on the edges. I did 6 muffins and a loaf because I felt like the loaf would be too big otherwise. It was perfect, could probably even do 9 muffs.
We chopped some onion and zucchini small - Same size as orzo - with 3 quartered garlic cloves and lightly sautéed on high heat in butter with salt, pepper, and cayenne. Then we mixed that in with the orzo and broth, added the Boursin and quartered medium size tomatoes. Covered and cooked 25 min, added 4c kale and stirred in. Recovered for 5 min, uncovered for 5 min. Josh ate with a salmon filet. SO good.
11x7 again. Regular flour. Cooked about 40min and was still pretty batter-y. I pulled them out anyways and let them cool in the pan, then fridged them. Fingers crossed.
