This tastes phenomenal. I also tossed some roasted tomatoes on top since I had them in the fridge. Don’t be alarmed, “creamy avocado sauce” is smooth guacamole and if yours runs like a sauce with the same ingredients, I’d be surprised. Chunky guac would also be delightful.
LOL. Well. This is on me, I used not brown rice crispies (just the regular ones but made sure GF-I have the giant malt o meal bag version) and went with weight in grams measurements using the handy metric conversion tool on here…failed to consider that brown rice crispies are likely heavier by weight than plain regular ones (also no glazes on the regular/GF cereal pieces which would also skew this). Otherwise I followed the directions, where things seemed questionable was after stirring the cereal and peanut butter/honey together. It seemed a little dry and also tall even after I compacted it with the bottom of a jar per instructions. No regrets, still tasty, just not portable. When I cut them the cereal shot out of the sides in every direction, a situation my dogs were VERY pleased by.
This was a huge hit. I did long grain white jasmine rice in my Instant Pot as usual and otherwise stuck to the recipe. I also heated the sauce ingredients slightly in the microwave once they were all together, to help with mixing. Definitely making this again.
