These came out so fantastically, I am very impressed. I stuck to the recipe except I didn’t have any jalapeño on hand. After I used my immersion blender to purée about half the beans post-pressure cook (did not need the additional 2 cups of bean liquid-only added back about 1/4 c maximum), I mixed the puréed and partially intact beans to check the overall texture and taste tested. I added 1/2 tsp of salt and that brought the flavor exactly to where I wanted it. Really excited about these and looking forward to making and eating more!

Used jasmine white rice, subbed in coconut options for the dairy (coconut evaporated milk, coconut sweetened condensed milk, coconut cream instead of heavy whipping cream). Used canela cinnamon sticks as recommended in the rice/cinnamon stick/water soak but added some Diaspora ground cinnamon at the end to bring up the flavor. Used my vanilla bean simple syrup instead of granulated sugar/vanilla extract listed in the ingredients (2 oz by weight instead of 1/3 cup).
Came out very nice for being coconut milks (untested by original recipe)! I will probably switch to common cinnamon sticks or at least half and half since the cinnamon flavor is not quite what I want even after adding the ground cinnamon at the end. Going to try a different rice option next time, my taste tester says it isn’t “ricey enough”.

This came out fantastic. I probably won’t always use dairy milk but should probably achieve similar results with plain almond milk. Washing the rice is critical, definitely do not skip! Ever since I started washing rice in a more traditional method based off a sushi rice recipe’s recommended method, I’ve been making better rice than ever. It really is obvious in this recipe how much washing it helped keep the integrity of each grain of rice.

Used instant decaf coffee but otherwise stuck closely on the ingredients. Didn’t pour the liquids in layers since my family prefers them mixed for consistent flavor (despite how pretty the originals look).
