Meatballs only, doubling the recipe (since I have 1 pound of each meat defrosted), using GF breadcrumbs and skipping the gravy/potatoes portions of this recipe.

These were fantastic, very easy to make if you’re smart and don’t try to compress the milk soaked cereal to press out additional cereal milk (don’t be like me 😂 this made a gross glop). Next time I will probably use half the amount of topping cereal/butter mixture because 3 cups of cereal even somewhat crushed over an 8x8 or 9x9 was excessive and made it a little messy to cut the mochi into squares and remove them from the pan. Very tasty!
Jasmine white rice (long grain), washed fully, toasted in my Instant Pot on sauté on high (no medium option) in vegetable oil for over 10 minutes but still didn't have very browned rice. Moved on to the next steps because it was later in the evening than I intended and we were hungry! Used a can of diced tomatoes instead of the recommended fresh tomato and doubled the tomato paste for fun. Skipped frozen peas. This came out pretty nicely but next time I would reduce the chicken stock by at least 1/2 cup-flavor was great but this was a little too wet. I would probably also add at least some ground pepper-crushed red pepper?-next time because it was flavorful but missing something that wasn’t easy to pinpoint.
