These muffins are really good, and much lighter than the “best ever” ones (even though they aren’t *quite* as good..).
I did use 1/2 white sugar and 1/2 brown sugar for the topping. Made for a nice sweet crust.
20 muffins was exactly right. I only had 15 liners, and honestly I think I prefer the ones that were just cooking spray instead of the liner. I like the crispness that they get from that.
Used pecans, subbed melted butter in place of veg oil. Doubled recipe. These turned out amazing, we will definitely make them again with the butter sub.
