These are amazing!! I added chunky sea salt, black pepper, cumin, paprika, and cinnamon to season. They’re the best soup topping - never throw away pumpkin or squash seeds!!
This was so yummy!! I did 1 cup of cottage cheese, blended, with homemade stock and some shredded chicken from earlier in the week. I also oven roasted 2 heads of garlic and cubed the butternut squash before oven roasting instead of whole to cut down on time. I squeezed the garlic into the blender along with the squash cubes, stock, and cottage cheese. Lastly, I added more of the spices than called for - I like lots of cumin and cinnamon in butternut squash or pumpkin soup! Topped with homemade roasted butternut squash seeds and some gourmet red and purple pepper flakes ✨
This was good - I do need to tweak it a bit I think. Maybe it needs more tomato sauce? And I think I’ll blend the cottage cheese next time, the curds didn’t melt in the oven how I’d hoped. Ngl I think our oven is running cooler than it’s supposed to and maybe that’s a contributing factor.
