10/10 for flavour, 3/10 for structural integrity. Next time try adding psyllium husk to the orange juice — 5% by weight of the almond and rice flours, or 1T by volume.
I’m genuinely surprised — I’ve never really found a love for lentils because of their earthy flavour, but this recipe is great! Lightly sweet-tangy and with no perceptible earthiness. One addition: A bit of 5-Spice stirred into the lentils while driving off moisture before adding the dressing.
Added an onion and some leftover roast mushrooms, and half a can of cannoli beans. Used savoury as well as fresh sage, but felt both needed more. Next time: Add healthy amount of mushrooms powder to broth for added salt and umami. Purée beans with broth. Will probably need more broth to accommodate.
Pretty good. A bit sweet but I double rolled the balls so maybe just once would do. The sugar melted anyway — maybe it would stick around if I chilled the balls before rolling or baking?
