This was a lovely little cake! I used a 9 inch pan so it was a bit flat but easy to slice and eat by hand. The sour of the rhubarb went perfectly with the sweet cake beneath.
Used seasoning to make my own Italian sausage with ground pork. Used one cup breadcrumbs and 3/4 cup parmesan as it’s all that I had. Used about 1/4 tsp of garlic powder in place of garlic. Only needed 3/4 cup of water. Added about a tablespoon of bacon grease as my ground pork always tends to be dry. 15 minute bake time was plenty. So yes I changed a lot, but they turned out great! Made about 60 meatballs using a one tablespoon cookie scoop.
I’ve made this many times. Great as is written. This time I used more powdered sugar because I only had a bit left anyway. And I used half a cup of chocolate chips. I put it all in the food processor to break down the chips. That extra bit of chocolate is nice! I use water to make a cup and mix it using a milk frother.
