I made the brother with 750 ml water as I wanted to freeze some of the recipe - I made the broth up with the extra water when reheating it. Saved & chopped the dried shiitake mushrooms and returned to the broth. Used rice noodles, not udon and cooked them in the strained broth. Steamed cabbage wedge in the microwave for 2 minutes before shredding & placing in bowls to pour broth and noodles over. Froze remaining broth and miso-peanut balls for future meals. It was tasty and easy to make.
