Incredible! Lots of prep work but can be done ahead. May try pine nuts instead of walnuts next time. Cauliflower puree was delicious on crusty sourdough
Have more stock available, we got real close to running out. Takes double time to cook risotto. Butternut squash really good fried on skillet, maybe add 1/3 more.
Recommend covering during simmering/adding a little milk if needed, was pretty thick. Maybe sub water for chicken stock. Very spice forward, delicious with good bread.
Delicious but takes way longer than stated. Not sure how many lbs this bird was but took 1.5hr to cook to 160F. Came perfectly up to 165F after a 10min rest
Delicious! Was only able to make a half recipe since I didn’t have enough chicken stock. Recommend cutting beans in half and only one head of garlic per recipe (or both and leave the other for spreading on toasty bread!)
