One of those recipes that’s difficult to make cute, lol. Tasted good but extremely rich! I regretted stirring in the cheese cuz it became very stringy.
Utilized this in my search for different vehicles for Trader Joe’s Pumpkin Raviolis besides sage and brown butter. It was good, but the soup would probably be better with plain cheese or cheese and spinach stuffed pasta. My idea was that the sweetness of the pumpkin would need acidity in a broth, such as the lemon in this. I found that the recipe as written needed a chicken bouillon cube at the end + more salt and pepper than I’d like in order to make the flavors pop.
