This is delightful. Did use quite a bit of “garden salt” and pepper both in the dressing and at the end, mixing the salad. I wanna make this with sliced up pea shoots instead of arugula for the cronch. Served with rosé which was perfect, could also do a white wine with an herby feel.
Chose to stir-fry the whites of the green onions, two minced bird peppers, the broccoli, and julienned carrots instead of just steaming the broc. No tofu/meat. Peanut butter was a fine substitute for cashew. Turned out lovely, definitely more like 2-3 servings though. Would increase the amount of soba for sure.
Changed up some stuff. Sautéed onions with 3 chopped thai bird chilis. Added the rest of the stuff, including all the veggies before pressure cooking. Let sit before releasing for 5 minutes to account for the “sauté” at the end of the original recipe. Served with cilantro and a Gewürztraminer!
