Should have salted throughout, it took a heavy lift to get it tasting right as written. I did my usual dice on the potatoes, next time I would make them a lot smaller (maybe 1”). Also added paprika and Old Bay, used Colby Jack not cheddar cuz I had an extra block lying around.

Halved recipe, used 2% milk, and chicken broth. Delightful!
