As far as flavours go, this one strikes that simple balance. The real question. Is it really worth all the effort. My answer is yes. But you have to realize that my favourite place is the kitchen. This was a fun couple hours for me.

Puerco en Chile Pasilla, or Pork in Chile Pasilla. A very tasty dish. Rick is correct, you don’t need all those special mushrooms for this to work. I did soak and use some dehydrated Shiitake mushrooms and used the soaking liquid with the chile sauce. Two notes about Rick Bayless. He is the younger brother of Skip Bayless (controversial sports writer and celebrity). Rick was offered the position of head chef to the Obamas in his first term as president. He turn down the offer because he was about to launch his string of Mexican restaurants, and felt he wouldn’t have been able to fully commit to those responsibilities. I personally enjoy his YouTube programming Mexico, One Plate at a Time. As for my dish. I enjoyed the weekend in the kitchen. I made fresh Queso fresco and corn tortillas. Enjoyed the pork tacos with some of Chef Johns refried beans and a salsa verde I blended up using some tomatillos, poblano peppers and a few chile árbol. A lot of work, but we enjoyed them.

Nicole from Kalejunky brings us this interesting dish. Make sure to use fresh coconut and I also suggest using sweetened as well. At my high elevation things tend to get to hot in the pan. I had to reduce my heat to a simmer and add more time to adjust for that. It was good and

Cinco de Mayo, a prominent holiday in Mexico, commemorating the battle of Puebla. Between Mexican and French forces, during the Mexican war of independence. Newly elected President Benito Juarez tasked General Ignacio Zaragoza to march on and fortify the city of Puebla with an out numbered force. It was a decision made in anticipation of a large French force commanded by General Charles de Lorencez preparing to assault the city. On May 5th in the aftermath of an entire day of fighting, General Charles de Lorencez realized he was suffering far more casualties than that of General Zaragoza, and decided to retreat. A major win for Mexican forces. A tip of the hat to those brave men. Tonight my wife and I will enjoy Chicken Enchiladas and Mexican rice from scratch. Rachel Cooks dose an excellent job of explaining Tortillas. To be honest, until I saw her video I was lost. Isabel does a bang up job herself. All four recipes will be located on my profile page. I made this soup thinking, eh, just another bowl of soup. It was overcast and gloomy, just a chance to use a frozen ham bone. No photos required.
I want to admit, the attached photo is the one from the linked website Wholesome Made Easy. It frustrates me that I made no attempt to snap a photo. This is not Ham and Navy Bean Soup. This is a magic potion created to warm a soul. Valerie brings us this cheap and simple gem. Especially if you own “Magic Pot”.
It was so good. I joined her page for the only reason but to give her five stars. Guys, this soup is worth the go. Even if you have to soak over night.
