A good meal prep. Added shredded carrots, and ended up adding extra onions, raisins, and cilantro. Also put extra spices but ran out of curry powder so I just did curry powder spices. Did half and half mayo and yogurt bc I had some yogurt to use up.
Turned out great! I used spinach instead of beet greens. Took kind of a while bc of roasting the beets and everything. I added soft boiled eggs to make it a meal.
