Followed somewhat loosely bc I didn’t have a lot of carrots and had some extra cucumber and arugula. Turned out yummy! I hope it holds up in the fridge overnight for my lunch
So yummy basically a pile of veg dinner! My fav! I did triple the sauce. Used the first part to marinate the tofu all day, the second part to toss over the broccoli before roasting, and the third part to dump over the tofu after baking. Didn’t feel like I overdid it on the sauce either.
I feel like I don’t normally say this but it was a little kale heavy in the pasta to kale ratio and could’ve used more pasta or less kale but otherwise yummy
