Tasty but made a lot more than I thought it would (prob 4 servings). I crumbled tofu and baked it with lots of seasonings to make my own vegan chorizo. Added extra spices to the chickpea mixture, and extra cream cheese (I bet tahini would’ve been good as a substitute). I put a bunch of nooch on top at the end
I used this recipe very loosely to clean out the fridge. Used normal couscous, and threw in pickled onions, roasted some artichokes w the broccoli, added some leftover lentils I had, and lots of dill!
Yummy! Added white beans for protein and they had a nice texture too. We foraged a ton of morels and had them on the side and mixed a couple in which was great but I wanted them to be the star of their own show lol so I mostly ate them by themselves, sautéed in butter and a dash of soy sauce.
Tasty and easy. Wish I had bok choy but I only had carrots and it was good but I feel like bok choy would’ve been top notch. Also I normally prefer full fat coconut milk but it was hard to mix and I would prob use low fat next time just for the convenience. Would def make again
