Threw together a quick sunbutter + maple syrup glaze to top them with, and lemmie say, these turned out AMAZING!! Very dense brownie; reminiscent of Cosmic Brownies, or as my husband said, "like the brownies that used to come in TV dinners ... and that's not a bad thing" 😂
Made it; I don't do gluten, so I used a mix of oat flour and sweet potato flour (along with baking powder, to make it 'self-rising') knowing it wouldn't turn out exactly the same--it still turned out very nicely! 😊
I have complicated dietary issues, so I decided to be difficult— I substituted oat flour for the flour, honey for the sugar, used dairy-free milk, and oil instead of butter—and they were absolutely delicious!!! Fluffy, nice rise, and lovely texture; I will 💯 make these again!! 🤩
Made this last night with some leftover gluten-free pancakes (who has leftover pancakes, you ask? Someone who has just discovered after eight long years that she *isn't* actually allergic to eggs, and has gone overboard with all kinds of recipes, JUST BECAUSE SHE CAN, that's who... 😉)— and it was amazing!!! 🥰😍😋
I have a lot of dietary restrictions, so I did a few recipe tweaks (gf flour, honey instead of sugar), but—it worked well, and I had pancakes for the first time in nearly a decade. 😍 It's been a good day. 😊😋
