I don’t have a food processor so I instead used a fork to cut through the cubed butter to incorporate it, and used my hands to incorporate the cream/vanilla. The dough was crumbly and required pressure to hold together which I expected. They cut cleanly and I baked them at the maximum listed time—they would have benefited from another couple of minutes in my oven, but they are fully baked and delicious nonetheless. Pictured here freshly glazed, but once the glaze dried they took on a matted finish. I’ll be making these again.

I used 1/2 cup sugar and added vanilla bean paste for sweeter muffins, but I would want them a bit sweeter—I might use additional sugar or add honey with the wet ingredients next time, or serve with honey butter or jams.

Mods made: I had 2 bananas, I made up for the missing banana with 1/2 cup of unsweetened applesauce. I had an open container of sweetened vanilla Greek yogurt, so I reduced the white sugar by 2 tbsp and reduced the vanilla extract by 1/2 teaspoon. I used dark brown sugar. I made the chocolate chip version. I only have 8x4x4 inch loaf tins, so I used one of those and put the rest of the batter into a 6 oz ramekin which finished baking at 42-ish minutes; the loaf took 55 minutes in my oven. The banana flavor was mild, which I credit to the apple swap. The apple flavor didn’t come through; it only added moisture and bulk at the amount I used, so this is potentially a good way to reduce the intensity of banana flavor. IDEA: Swap all banana for applesauce, use cinnamon chips.

I added 1/2tsp dried parsley to spices.
To cook pasta in the sauce, complete sauce as instructed and bring to simmer; add 2 cups stock and 2 cups water OR 4 cups broth, and bring to boil. Add pasta, stir, and cover. Stir every 3-4 minutes until pasta is cooked through, about 10 minutes. If doing this method, you may need a bit more salt.
