This is a forgiving recipe. I used four small eggplants from the farmers' market instead of one big one, and the peppers were also a sweet pepper from the farmers' market instead of red bells. No sugar, no chili flakes, but I did add some paprika. Used a garlic paste I had on hand. Still good.
Working with what I had, I used dried parsley and mint. I also completely forgot garlic, but I did add some sumac. Still excellent, so it's a very forgiving recipe. Served with sumac onions and creamy cucumber salad.
I definitely like how this turned out. It brings out the apple flavors in the Calvados, you get some floral from the Elderflower, the tonic bitterness and lemon sourness balance out the sweet components. It's a good drink.
