Using up apples and pears that were starting to go soft. Added lemon juice on fruit while I decided what to do with it - heated it up with the caramel and boiled it down to a sticky consistency. Tin leaked onto tray below which smelled bad, but still plenty in the tin for the cake. Excited to try it tomorrow! It was delicious!
Added about 500g of wholewheat bread flour on top of the usual white and an appropriate amount of liquid. Made 4 BIG, filling pizzas (400g each) and had good air pockets after two days in the fridge
