This was pretty good! Add more salt than feels normal. I played on the Mexican flavors that were already being used here, so I seasoned the meat with taco seasoning, and then added just a little bit of chili powder and cayenne pepper to the mixture. I had to cook the casserole, covered, for an additional 20 minutes, which worked well. I think Rotel would be a good substitute for the salsa, since it would taste similar, but be a bit cheaper.
Made this again last night! I used the Walmart brand of yellow queso and it was great. I sliced the chicken and coated it in the queso sauce after it was cooked and put it in corn quesadillas with a bit of cheese. I served it with white rice I made with chicken broth since I had some to use up, and it was all really good. Noah said it was one of his favorites.
I don’t think I liked these very much. The blonde part is fairly thick, maybe stodgy. Kind of in a chewy sense, even when cooked all the way through. Probably wouldn’t make it again.
