My first ever frittata, never mind my 1st vegan one! It was delicious and found it very easy to do. We didn't have a springform tin so used a glass pie dish instead. I did slightly over boil my potatoes but they were absolutely fine in the frittata. A winner in our house and def have again! It isn't too bad cold the next day, a little softer , so def better fresh and delicious when eaten warm 😋
Just added what veggies I had, red and yellow peppers, red onion, mushrooms, tomatoes and left over new potatoes from night before. Lots of garlic 😋 we had vegan southern fried chick n strips and a small wrap with it. Yummy!
This was absolutely delicious , very tasty, a def winner in our house. Only thing is it smelled so good and we were hungry so wasn't in long enough to go crispy on top but we wll def try that next time.
I had 3 aubergines (bought for another recipe) but only used 2 as per this recipe, however due to the amount of sauce , and shrinkage from the aubergines, I'd def use 3 next time. Also, once sauce was ready I split it into 2 pots, one for him with the capers in (I can't stand them) and one for me without. But I still loved this recipe, and I think I would add a touch more chilli flakes next time too.
