Delicious! The guac and pico were so cold, it made the meat cold quick. Might just make my own room temp guac next time and take the pico out of the fridge a little sooner next time. I knew to only add a little salt to the meat, since cotija cheese is super salty. It worked out well!
Fantastic flavor, but weird combining hot meat and fully cold salad. It cooled down the meat instantly. So if there’s a way to change the ingredients so it’s more half hot and half cold ingredients, I might prefer that!
