Deep fried or oven baked, that is the question when it comes to empanadas. If you are team 'oven', than these Argentinian tuna empanadas (recipe is in Spanish) are for you! They have got a rich filling which is beside being colorful (white onion, red & green bell pepper, tuna, olives, capers) juicy and well balanced. Due to the fact that they are a bit time consuming I often make the double portion and store them in the freezer. Than you are well prepared for suddenly appearing hungry guests.
When the temperatures are rising and you are not very hungry or don't want to stand too long in front of boiling warm cooking puts, I recommend you these Japanese Mugen Somen! Easy and fast, delicious and 'sapper', just perfect for a hot Summer day!
Peru has got so many wonderful recipes and one of my favorites is the Aguadito de Pollo. If coriander isn't your thing I don't recommend this soup, but if you like it you are going to love this recipe. I tend to make a big amount because it has the tendency of miraculously 'vanishing'. ;-) So delicious to warm up on a cold day!
You are looking for something fast and delicious and happen to have eggplants, bulgur and yoghurt at home, go for this recipe. In no time the eggplants will be on your plate ... and in no time you will have enjoyed them for sure. The yoghurt adds a nice tanginess and the different textures are beside the great taste just wonderful.
