I would make a few edits to this, personally, because I live off of leftovers. Firstly, I would simmer the tomato sauce without chicken to thicken it, because I used a can of tomatoes and it was just too watery by the end of cooking. Spice mix was great. Also this doesn't work well for leftovers when also trying to poach an egg in it, so maybe poach the egg separately? Idk. But that first night it tasted great!!
Great, wholesome dish with TONS of nutrition. I only had green lentils, so I had to cook them longer. I also added 3 tbsp of tomato paste for color and some cayenne for heat. I also did half a bag of kale and half a bag of spinach for even MORE NUTRIENTS. MOOOAARRRRR. Ahem. But it's good. Make again sometime. Also if you make the basmati rice, do decrease the turmeric a bit for a rice cooker and mix it in because it WILL feel extra dry lol.
GODDAMN. This was so incredibly delicious, I would eat this for every day of my life if I could. Also, you might think the garlic powder + the minced garlic would be overkill, but it was NOT
This surprised me at how tasty it is. Fair warning though - if you use the full amounts of beans and lentils, you're going to want to make this 4 servings. Love the sweet and savory flavor!
